 politician Lamin Waa Juwara. Three days later, Eze tendered his resignation as editor in chief along with ten other member of the editorial staff. In response to the mass resignation being considered "a major blow," Eze noted the he and the others resigned "because our credibility was at stake and, by so doing we want the world to know that we cannot compromise on the ethics of our profession." In a June 2001 editorial, The Independent noted,
The Observer must rise once again because it is privileged as the only daily newspaper for a wide section of the nation. But if it is to be seen as truly independent its seasoned editorial team headed by the indefatigable Paschal Eze should be left alone to work in the professional and apolitical manner demanded of the profession. We demand nothing less as we concertedly condemn this most uncalled for interference. In the meantime we mourn and pay homage to the embattled Observer.
That same day, two more reporters resigned from their positions at the Observer. Eze later would indicate about the resignation that he risked his life and news media career to protest "editorial arm-twisting by government agents" and to bring attention to "the need for press freedom in The Gambia."

In 2002, Eze was editor in chief of The Entrepreneur Magazine, a publication of the Gambia Chamber of Commerce and Industry. In May of that year, Eze chaired the Miss Gambia 2002 beauty pageant. Five months later, in October, Eze was appointed as the West Africa director of the Miss Tourism World Organisation, an international pageant organizer that runs Miss Tourism World, Miss Bikini World, Model of The Universe, and Model of The World. Eze was tasked with organizing contestant selection events in each of the 16 West African countries to supply contestants to Miss Tourism World Organisation's four international pageants. In discussing his likely collaboration with a variety of West African tourism departments and authorities, Eze noted "My task is to bring West African countries into these mega events. I am particularly interested in using these events to promote tourism in the sub-region and I would be bidding for the hosting of the Miss Tourism World in The Gambia or Nigeria in 2004 or 2005, with over 60 countries in attendance."

In 2004, Eze organized the Christian Book Fair International 2004, an event attracted author and publisher participants from across the US and other countries, including Canada and the United Kingdom. In 2005, Eze owned and operated a Christian book store as well as organized the Christian Book Fair International 2005. In 2006, Eze again organized the Christian Book Fair International.

In January 2007, Eze was president of the Christian Book Outreach, Inc., a Coralville, Iowa provider of books to U.S. seniors in nursing homes and English-speaking African children. That same month, Eze initiated the Best-Caring Author Program which encourages bestselling authors to donate their autographed books to US seniors in nursing homes.
