The processing of mi xian in Yunnan is unique, involving a ferment process, and the tastes of mi xian have two types, namely ganjiang mi xian and suanjiang mi xian. The fresh Mixian smells fragrant, different from other kinds of rice noodle in China and Asia. Mi xian is very popular in Yunnan Province, it can be found in every street and every village in the province.
