es and pristine mountain water. The potatoes are grown by Across the Creek Organics farm located 15 km west of the Distillery. It takes approximately 7 kg of potatoes to produce one 750 ml bottle of Schramm Vodka. The vodka

 and bottling unlike some craft distilleries which buy cheap, mass produced bulk ethanol

Schramm Vodka is a true sipping vodka. Distilled to retain subtle character from the raw materials used to produce it, giving the vodka a unique flavour and aroma as well as creating a vodka with an ultra smooth mouth feel. Pemberton Distillery produces Schramm Vodka only 8 months of the year because fresh potatoes will only store that long. During those 8 months there are an average of 1300 bottles of Schramm Vodka produced per month.

 in oak barrels until September 2013. This is when the 'New Make Spirit' will officially become a Whisky

. However, the first bottling will not take place until 2015 when the Whisky is five years old.

The maturation is occurring in ex-bourbon casks. These are American oak barrels that have had bourbon mature in them for between 3 to 5 years and upon emptying they can no longer be used for bourbon

 is distilled using organic potato spirit which is blended with 8 organic herbs & botanicals (including Pemberton grown Centennial hops

) in the copper pot of Pemberton Distillery's smaller "spirit" still and carefully distilled over a 8 hour period.

The final product is bottled at 44% alcohol by volume and Schramm Gin falls into the medium style, London Dry Gin category. Medium style meaning that the Juniper character comes through a little more strongly than in standard Dry Gins.

Extracts

In late 2010 Pemberton Distillery started producing a line of handcrafted extracts using their own organic spirit as the extraction medium. The line of extracts include: Organic Vanilla, Organic Hazelnut, Pure Ceylon Cinnamon with more to follow.
