It may be because this bird mated with one which had a single DNA of white origin. For example if the bird in which it was conceived had a single white wing feather, this would have been transfered to the embryo and voila !
As a past breeder, I have seen this very often, having pure or almost pure white chicks from a parent with a sole white feather.
