The self organizing water micelle-triple helix structure for protein involves a large decrease of entropy that is a thermodynamic characteristic associated with the occurrence of life. The stabilization of the Zwitterion Tautomer of proteins, amino acids and peptides occurs when water dipoles are involved in the high energy-low entropy structure, similar in many ways to surfactant-water micelles. Could then the low entropy, self-organizing structures involving water, be some of the requirements for the beginning of life? Is the making of leather from collagen and water be a process that would have relevance in the study of life?
