Method

-cut the veal into small thin pieces

-sautée

 the meat quickly in a very hot pan with a little butter and a bit of chopped onion

-take the meat out of the pan and keep warm

-add white wine to the same pan with cream and demiglace and reduce into a sauce

-add the meat to the hot but not boiling reduction

-add sliced mushrooms

-refine with pepper, salt, paprika
