The New Hudson was set apart as the "Town of Haight" in 1825 from part of the Town of Rushford
and changed its name to New Hudson in 1837. The original name Haight was that of a militia general, who finally irritated the citizens enough with excessive demands that the people changed the name of the town.

The racial makeup of the town was 98.37% White, 0.27% African American, 0.27% Native American, and 1.09% from two or more races. Hispanic or Latino of any race were 0.82% of the population.
There were 268 households out of which 34.7% had children under the age of 18 living with them, 61.9% were married couples
living together, 4.9% had a female householder with no husband present, and 26.1% were non-families. 22.0% of all households were made up of individuals and 8.2% had someone living alone who was 65 years of age or older. The average household size was 2.75 and the average family size was 3.23.
In the town the population was spread out with 31.0% under the age of 18, 4.2% from 18 to 24, 26.8% from 25 to 44, 24.3% from 45 to 64, and 13.7% who were 65 years of age or older. The median age was 37 years. For every 100 females there were 97.8 males. For every 100 females age 18 and over, there were 104.0 males.
