The clear area is a large central vacuole. The more dehydrated the cell becomes (i.e. heated by a microscope lamp) the larger the empty vacuole becomes (water is leaving the cell). Organelles, most notably chloroplasts, do not enter because the vacuole is, of course, a membrane bound organelle.
