Quark (cheese)

In the Dr. Johanna Budwig Diet for cancer, she refers to the use of Quark as one of her key ingredients. Of the cheeses produced in America, cottage cheese is generally used as a substitute. After much research, most cottage cheeses are produced with the use of "rennet", which traditional "quark" does not contain. It would seem that sour cream, plain yogurt and cream cheese all have similar properties, but not all in one product, so nothing we produce is truly like quark. My questions are..... is there an American cheese, I'm not familiar with, like quark? Or, is there a cheese producing company in America, that produces quark?

Hoping someone has an answer and quickly. This is one of the best diets ever, to accomplish eventual wellness in cancer patients.

Nancy's Yogurt produces a cottage cheese without rennet and live cultures. From what I can tell, it is the closest thing you are going to find in the USA to the quark Dr. Budwig used. If you have an Earth Fare near you, you should be able to get the organic version of Nancy's Yogurt's cottage cheese. With anything dealing with cancer diets, you always want to go with organic.
