It might be because the water is to cold or not clean, I have a snapping turttle of my own and i clean his cage once a month and i put warm but not to warm water. yes they mostly hide dont move to much but still they are cool,feeding him is important they will eat pretty much any bug, i have never given him spiders or to many beetles mostly crickets or worms.
