Antonie van Leeuwenhoek discovered bacteria in 1676. He was using a single-lens microscope that he'd designed himself. He called them 'animalcules.'

In 1859, Louis Pasteur proved that fermentation is caused by bacteria and yeast growth, and not by spontaneous generation as had been previously thought.
