Coconut water

Here in Thailand one of the coconuts available is what I call a Bald Coconut. No husk just the shell with a little "Tin tin" tuft of fibre covering the soft "eye". I have been drinking 2 - 4 of these a day and only just realised that they are called Burnt Coconut [I.e. The husk is burnt away leaving the bald look]. It is then scrubbed from appearances.
Now as a Raw Foodist I know heat is bad for most food so does anyone know if and if so - how hot the water inside gets and what harm is done to it?
The flesh inside is quite thick - not like a gel and can sometimes be peeled off the shell.
So what is lost during this process and is the water still beneficial [Its still delicious]
