Hello All! I live in Southern NY near the PA border and my family and I make homemade wine and vinegar. I've been tempted to try making Balsamic Vinegar but not sure if I would be able to since the grapes that are used in Modena don't grow here as well. I've heard through the grape vine that you can use other types of grapes, even Red grapes to make it. Does anyone know which ones I could try to make my own Balsamic Vinegar? We use Concord and Pink Catawba to make our wine but wasn't sure if I could use those.

If anyone has any thoughts or suggestions, please let me know.
