Just look up saponification. It is just a long chain carbon molecule with hydrogens and some oxygens. The sodium hydroxide strips off the hydrogen tails of the molecule, which are hydrophobic, and replaces them with a OH ion, which will combinw both with oil molecules AND water molecules, which is what makes soap what it is. I has the ability to clean off grease and oil, suspend it, and rinse it off with water
