I run a carvery business. When cooking the turkey joint I have a fat that drips into the tray. I have always been told that I can chill the prodcut down to separate the fat on top from the water base at the bottom.

Can I dispose of the fat solid on top into the general waste bins which will end up in landfill??
I thought this was classed as a catering waste in the same way I would dispose of plate scrapings...

Any help would be appreciated
