Sin offering was generally meat (so blood), and then burnt on the alter, sacrificed to God. the new testament was pointed to by the old testament. the blood that was poured out from the animals to atone for the sins of the people points to the king who was and is and is to come. that Jesus was offered as a sacrifice to God to take away the sin of the world by pouring out his blood for many, and so to those who believed in him he gave the right to become the children of God. to know the full meaning of leviticus 8 you would need to go back further and read right from where the people started sacrificing to God, starting in Genesis with Cain and Abel.
